There are many recipes out there, but each one works better or worse, as they depend on small tips that are sometimes overlooked. Sometimes it’s a small tip halfway through the process, or a comment that illuminates our recipe about the importance of Seville oranges (not just any orange will do; you have to make sure they’re organic, otherwise you could be using oranges from the streets of Seville… full of pollution, without traceability or food safety… an unethical practice that continues nonetheless).
